The holiday season is here and if you're on the lookout for the perfect dessert to bring to a Christmas party or to enjoy as a festive indulgence, look no further. Today, I'm excited to share a mouthwatering mint chocolate dessert that not only makes your taste buds dance but also caters to dietary preferences. This scrumptious creation became a staple in my repertoire when I lived in Melbourne and needed a dairy-free and gluten-free dessert for my birthday celebrations.
Unfortunately, the website where I found this easy peazy dessert I can no longer find on the world wide web but the recipe lives on in my kitchen, and now, it can live on in yours too!
Ingredients:
For the Base:
- 1/2 cup Medjool Dates
- 1/2 cup walnuts
- 1/2 cup cashews
- 2 tbsp coconut oil
- 1 tbsp cacao powder
- 2 sprigs of mint (stalks removed)
For the Mousse:
- 100g dark chocolate
- 1 cup coconut cream
- 1/2 tsp mint extract
- 1 egg yolk
Instructions:
Creating the Blissful Base:
- Combine Medjool dates, walnuts, cashews, coconut oil, cacao powder, and mint leaves (stalks removed) in a blender or food processor.
- Blend until the mixture reaches a smooth consistency. If needed, add a small amount of hot water to soften the dates and to help the mixture break down.
- Spoon the base mixture into muffin tins (for single serves), pressing down firmly to create a solid foundation for the mousse layers.
Whipping Up the Mint Chocolate Mousse:
- In a saucepan over low heat, melt the dark chocolate slowly until smooth.
- Add coconut cream, mint extract, and egg yolk to the melted chocolate, stirring until well combined.
- Pour the chocolate mixture over the prepared bases, ensuring an even distribution.
- Place in the fridge or freezer to set.
Serve and Savor:
- Before serving, take the mint chocolate delights out of the fridge and pop out of the tray while still hard. Allow to soften before you serve.
- Serve with your choice of toppings. My favourite is a mix of berries for a delightful contrast in flavours.
